Looking for a chili recipe to serve up for Super Bowl Sunday?

This chili is loaded with protein and healthy carbs but also tastes great, you can feel good about eating this chili! It can be served with the typical accoutrements: green onions, cheese, tortilla chips, sour cream etc.

What I love most about this recipe is that can easily be doubled or even tripled (especially for hungry men) and it freezes really well-bonus!

I’ve given this recipe to a dozen or so clients and every person that’s made it has absolutely loved it- feel free to play with the spices depending on what you enjoy. Personally, I went with mild chili powder and a semi mild jalapeño since my tolerance for spicy food hasn’t totally returned since pregnancy.

Sweet potato turkey chili
Yield: 4-6 servings
1lb ground turkey
1 lg yellow onion, diced
3 cloves minced garlic
1 jalapeño diced
1 large sweet potato,
peeled and diced
1 1/2 tablespoons mild chili powder
1/2 tablespoon paprika
2 cans fire roasted tomatoes
1 can diced green chilies
1 can black beans, some of the liquid drained off
1.5+ cups low sodium chicken stock- this depends on how thick you like it

Directions:
Heat olive oil in large pot, sauté onions and garlic until slightly golden. Add diced jalapeño, chile powder and paprika. Add ground turkey, breaking up with a wooden spoon until it’s cooked through. Add tomatoes, green chiles, sweet potato and beans. Mix everything to combine then add chicken stock, enough to cover the chili. Season to taste with salt and pepper. At this point let it simmer on the stove for one hour or transfer to a crock pot and cook on high for 3-4 hours.
Garnish with cheese, tortilla chips, cilantro, and sour cream.
